Braised E-fu Noodles with a Trio of Mushrooms

Ingredients:
- 350 g E-fu noodles (egg noodles/yee mee)
- 60 g Mini king oyster mushrooms, sliced
- 60 g Brown bunashimeji mushrooms
- 60 g Fresh shiitake mushrooms, sliced
- 50 g Red capsicums, julienned
- 60 g Spring onion, julienned
- 30 g Minced ginger
- 30 g Minced garlic
- 3 tbsp Angel Dark Soy Sauce
- 1 tbsp Angel Light Soy Sauce (First Draw)
- 2 tbsp Angel Oyster Sauce
- 1 tbsp Sesame oil
- ½ tsp White pepper
- 1½ cups Water
- 6 tbsp Cooking oil
Garlic Sauce:
- 60 g Minced garlic
- 7 tbsp Angel Light Soy Sauce (First draw)
- 1 tsp Brown sugar
- ¼ tsp White pepper
- 2 tbsp Water
- Heat up the oil and fry the minced ginger and garlic till fragrant. Toss in all the mushrooms, fry for 30 seconds.
- Add in the water, Angel Dark Soy Sauce, Angel Light Soy Sauce (First Draw), Angel Oyster Sauce, sesame oil and white pepper, stir till well combined. Then, add in the noodles stir well.
- Toss in the red capsicums and spring onion, mix well and turn off the heat.
