Teochew Braised Duck
Ingredients (A)
- 1 whole Duck
- 1 slice Lengkuas
- 1 tsp 5-spice powder
- 1 tbsp Angel Thick Soy Sauce
- 60 gm Rock sugar
- 1 tsp Salt
- 2 tbsp Oil
Ingredients (B)
- 1 slice Lengkuas
- 2 slices Ginger
- 1 inch Cinnamon
- 2 pcs Cloves
- 1 pc Star anise
Ingredients (C)
- 1 cup Angel Light Soy Sauce (Selected)
- 1 tsp Sesame oil
- 1 tsp Pepper
- 1 tsp Chicken powder
- 800 ml Water
Tip
- Suggest to use kampung duck as its thinner skin and thicker flesh will give a better taste enjoyment.
- Rub duck with Angel Thick Soy Sauce, put salt, lengkuas, and 5-spice powder inside duck.
- Heat oil in wok, add in rock sugar to cook in low heat until light golden.
- Add in (B) and (C), stir until sugar dissolves. Add in duck and roll evenly, cover to cook until it becomes tender. Cut into pieces and serve.
